There are three types of spinach; Summer, Winter and New Zealand. Summer and Winter varieties are annuals whereas the New Zealand variety is half-hardy. Start picking the outer leaves leaves as soon as they reach a good size. Keep picking to encourage new growth. For the New Zealand variety pull shoots from the base of the plant.

Early March to mid June n/a Soil should be rich and contain plenty of organic matter. Ideally sow summer varieties between other tall vegetables to provide some shade. Sow Summer and Winter varieties thinly with 12ins between the rows. Seedlings should be thinned to 3in apart. New Zealand plants should be 2ft apart End May to end April if all varieties sown Can be kept in a plastic bag in the fridge for two days but its not ideal. To freeze: use young leaves, wash and drain then blanch for 2mins. Cool and press out excess moisture before freezing. Wash well to remove grit. Place in a large pan, add salt and pepper (no water). Steam for 5-10 mins. Squeeze out excess water with a potato masher.
